Reading and recipes

I am so proud.  At Spaulding Elementary, awards can be earned daily.  The kids work hard and can cash in their points for prizes and rewards.  Last Thursday and today, Aiden and Chris turned in their hard earned pom-poms to have the privilege of reading a book of their choice to Jacob's preschool class.  I joined in the audience and wouldn't have missed it for the world.  Jake beamed and they were as proud as can be.  Super readers and super star brothers.  The best renditions of The Book Without Pictures and The Biggest Pumpkin Ever, two of Jakes all time favorites.  These boys may fight but through and through, they're loved and blessed beyond measure and know it darn well.  The video files are too large to share but heres a snapshot of Aiden in action this afternoon.

He's mastered the balance and understands the important of sharing the picture and reading at the same time.  Maybe we've got a future teacher on our hands.


In other news I made a healthy yummy recipe that was a keeper for sure so in wanting to have it readily available and easy to share, I'm posting it here.  You will thank me.

Healthy Banana Chocolate Chip Oat Muffins
1 cup wheat flour
1/2 cup white flour
1 cup rolled oats
1/2 cup sugar
2 tsp baking powder
1 tsp baking soda
1/3 cup mini choc chips
2 large eggs
3 overripe bananas (approx 1 cup mashed)
1/2 cup applesauce
1/4 cup skim milk

Mix together all ingredients.  Pour batter evenly into 12 lined muffin tins.  Bake 350/375 for 16-18 min.  Enjoy!

They are moist, delicious and full of flavor.  As an added bonus I put in 1/3 cup of milled flax seed.
